Dr Fox's research interests span across food science and modern food production approaches, with a core focus on food microbiology. This includes understanding the ecology of bacterial pathogens through food supply chains, and strategies to control associated contamination and improve food safety.
Research areas include:
- Global ecology of foodborne pathogens through food chains and their impact on human public health and clinical instance of disease.
- Food safety, including molecular surveillance of pathogens in food processing environments, and control strategies to reduce the burden of bacterial contamination in food systems, such as cleaning and sanitising as well as novel biocontrol strategies.
- Genomics of foodborne pathogens, with a particular focus on stress resistance mechanisms.
- Antimicrobial resistance of foodborne bacteria, and the role of food production systems in the One Health paradigm.
- Microbial food quality, with a particular focus on dairy foods.
